you need to do something about the unknown publisher warning if you want more people to play

That's such a hasstle, releasing it on Steam will circumvent that but I really want to stress test the servers with more players before doing that.

The architecture is designed to mathematically support thousands of players per server simultaneously. Would be nice to make sure it works in real world preactice before the Steam release.
